My meat-and-potatoes guy is happy, so very happy. And, being the good girlfriend that I am, I made his favorite. STEAK.
I sliced the steak and topped it with a mushroom and onion saute, and a fresh herb sauce. I added some minced chipotle to the mashed sweet potatoes. And then I served it all with corn, just to add a little more vegetables to the mix.
Fresh Herb Sauce
1/2 c. fresh parsley
4-5 fresh basil leaves
1 green onion
2 T red wine vinegar
2 T extra virgin olive oil
salt and pepper
Finely chop the parsley, basil and green onion. Mix in vinegar and oil. Salt and pepper to taste.
