Salmon with Black Bean Salsa


You will very easily see a trend in my cooking. When I cook for my family, I make fairly healthy food. When I cook for my boyfriend and I, not always so healthy. Obviously, this was a family meal.

For the salmon, I seasoned it with cumin, chili powder and a squeeze of lime juice.

Black Bean Salsa
1 can black beans
1 c. frozen corn kernels
1 tomato, diced
1/2 red onion, diced
1/4c. fresh cilantro, chopped
salt
2 t. fresh lime juice
drizzle of extra virgin olive oil
